Pork Meatballs

1lb Ground Pork
1pkg Dry Onion Soup Mix
Rolled Oats (approx. 1/2 – 3/4 cups)
2 Eggs
1 Bottle Honey Garlic BBQ sauce (We use Diana’s Sauce)

1- Combine all ingredients except the BBQ sauce
2- Form into balls
3- Place in a Slow Cooker
4- Pour bottle of sauce over meatballs
5- Cover and put slow cooker on low for 4-6 hours
6- Enjoy!

Baking Powder Biscuits

2 cups – Flour

1 Tbs. – Baking powder

1/2 tsp. – Salt

1/4 cup – Shortening (I use margarine)

1 cup – Milk

Preheat oven to 450 degrees and lightly grease a baking sheet.

In a bowl mix the flour, baking powder and salt. Cut in the shortening until the mixture has only pea sized lumps.

Add milk until dry mixture is absorbed.

Drop by heaping spoonfuls onto baking sheet.

Bake for 12 – 15 minutes or until golden brown.

Enjoy!

A quick and easy biscuit recipe that can be whipped up in a flash. You can also add cheese, spices etc. to enhance the flavour.

All Day Meatballs

1 cup – Milk

3/4 cup – Quick cooking oats

3 Tsp. – Finely chopped onion

1 1/2 tsp. – Salt

1 1/2 lbs – Ground beef

1 cup – Ketchup

1/2 cup – Water

3 Tsp. – Vinegar

2 Tsp. – Sugar

In a bowl, combine first four ingredients.

Crumble beef over the mixture and mix well.

Shape into 1-inch balls.

Place in slow cooker.

In a bowl, combine the ketchup, water, vinegar and sugar, mix well.

Pour over the meatballs.

Cover and cook on low for 6-8 hours or until the meat is no longer pink.

Enjoy!

I am a big fan of the slow cooker (or crock pot as some call it). This is an easy recipe that pairs well with rice or egg noodles.

Impossible Pie

4 – Eggs

2 cups – Milk

3/4 cup – Sugar

1/3 cup – Flour

1/4 cup – Butter

1 tsp. – Vanilla

1 cup – Coconut, shredded

Put all ingredients in a blender on high speed. Count to ten slowly, then pour into a well greased pyrex pie plate. Bake for 40 minutes at 350 degrees.

Butter Tart Squares

Base:

1 cup – Flour

2 Tbs. – Brown sugar

1/2 cup – Margarine

Topping:

2 – Eggs, beaten

1 cup – Brown sugar

1 cup – White Sugar

1/2 cup – Oatmeal

1/4 tsp. – Salt

1/2 tsp. – Baking powder

1 tsp. – Vanilla or Rum extract

1 cup – Raisins

Base: Mix and press into 8 x 8 pan, bake 15 minutes at 350 degrees.

Topping: Mix together, pour over base and put back in oven for another 20 minutes.

Brocolli Salad

1 head – Brocolli, chopped

1 cup – Raisins

1 cup – Cheddar cheese, cubed or shredded

1/3 cup – Bacon Bits (or crumbled bacon)

1/2 – Red onion

1/4 cup – Unsalted sunflower seeds

Dressing: 1 cup mayo, 2 Tbs. vinegar, 1 tsp. sugar

Mix dressing ingredients together thoroughly and toss with salad.

Enjoy!

John is a fan of brocolli salads and so I came up with this one for him and he says it’s a keeper.

Fruit Salad with Raspberry Dressing

Cut grapes, apples and peeled kiwi into bite size pieces.

Dressing: Combine vanilla pudding, sour cream, milk and raspberry jam.

Toss dressing with fruit and Enjoy!

I am not a huge fan of vegetables, but I really enjoy fruit and it is fun to find new and interesting ways to eat it.

Beverly’s Sausage Stuffing

6-8 cups – Bread crumbs

2 cups – Celery, chopped

1 – Onion, chopped

1 lb. – Sausage meat

1-2 tsp. – Spike seasoning (found in health food stores)

Veggiesal and Pepper to taste

1/4 cup – Margarine, melted

3-4 Tbs. – Milk

Combine first 3 ingredients, mix well.

Add sausage and seasoning and combine well.

Add margarine (and if not moist enough add milk).

Stuff turkey, or bake in a covered pan for 1 1/2 – 2 hours at 350 degrees.

I am not a fan of stuffing, mostly due to the sage that seems to always be in it. One Thanksgiving I was asked to bring stuffing to a family gathering and so I made this and everyone enjoyed it, even me.

Pork Chop Casserole

4 – Boneless pork loin chops, 3/4-inch thick

1/4 tsp. – Italian seasoning

1/4 tsp. – Pepper

2 large – Potatoes, peeled and sliced 1/4 inch thick

1 medium – Onion, chopped

1 Tbs. – Flour

3 Tbs. – Reduced fat margarine

1 Tbs. – Green pepper, chopped

Sprinkle pork chops with seasoning and pepper.

Arrange in the centre of a 13 x 9 x 2-inch baking dish that has been coated with non-stick cooking spray.

Combine potatoes, onion and flour, place around chops.

Dot with margarine, sprinkle with green pepper.

Cover and bake at 325 degrees for 55 minutes.

Uncover and bake 10-15 minutes longer, or until potatoes are tender and the meat juice runs clear.

I enjoy a nice simple pork chop recipe, our son is picky and he will eat this so I would say it is pretty kid friendly. This casserole can also be versatile by changing the seasonings and adding other vegetables with the potatoes.

Creamy Fruit Salad

Cut up apples, bananas and grapes. (Any fruit can be used, this is just what I had on hand at the time).

In a bowl combine plain yogurt, some orange juice and brown sugar (I use Splenda brown sugar) to taste.

Combine with fruit and enjoy!
